Now, how about another vegetarian pasta dish for a more interesting twist to it?
For those who aren’t lactose-intolerant, give this dish a shot, and you’ll see how easy it is to make, as well as how intense the flavours are. It’s a dish that Juan and I tried experimenting with one day when we decided to eat in, save money, and enjoy a delicious meal all at once. And it paid off.
SPAGHETTI IN MUSHROOM & WHITE WINE CREAM SAUCE (Serves 3 – 4)
Ingredients:
1) 1 onion, chopped
2) 1 packet of mushrooms, finely sliced
3) 1 small glass of dry white wine (make sure the bottle doesn’t say “Torino” or “Sweet”)
4) Finely grated cheese
5) 300g of milk cream
6) Salt & Pepper
7) 1 packet of dry spaghetti pasta
Steps:
1) Stir fry the chopped onion until it turns slightly brown
2) Add in the mushrooms and let them cook on low heat
3) Meanwhile, cook the pasta in boiling water for 8 – 12 min, and take it out al dante (not too cooked)
4) Add the glass of white wine to the onions and mushrooms, and throw in the cooked pasta
5) Stir fry the pasta with the ingredients until homogenously distributed
6) Add salt and pepper to taste
7) Serve warm with a drizzle of grated cheese

pasta with fresh Parmesan is always a winner! blue cheese with a bit of milk is quite easy to do also
