French Onion Soup & Cheese Toast

It’s been a really long time since I had my dose of French onion soup, and since I love onions particularly much, I decided to try my hand at making this French delicacy that is also oh-so-healthy.

It’s basically a clear soup (not thick or creamy like the cream of vegetable of cream of butternutsquash that I made the last few weeks).

FRENCH ONION SOUP & CHEESE TOAST(Serves 3-4)

Ingredients:

1) 2 large onions
2) 3 tablespoons of butter
3) 1.5 litres of beef stock
4) 1/2 a loaf of French baguette
5) 1/2 a packet of grated cheese
6) Powdered garlic

Steps:

1) Slice the onions very finely, and then cut the slices into halves
2) In a heated wok or pan, add the butter
3) Once butter is melted, add in the onion slices, and sauté till golden brown
4) Add in the beef stock, and cook on high heat, bringing to a boil
5) Reduce to a low fire, and simmer with the soup covered for 25 – 30 minutes
6) While soup is simmering, slice the baguette into equal width sizes
7) In a baking tray, arrange the bread slices, and sprinkle grated cheese and powedered garlic equally on all slices
8) Toast the bread slices for 10-15 minutes on low heat in the oven
9) Serve the French onion soup piping hot, with a cheese toast on top


Fresh onions:

Cover wok and let soup simmer on low heat:

Slice the baguette into slices of equal thickness:

Arrange bread slices on a baking tray, and sprinkle with grated cheese and powdered garlic:
