Last week, one of my best friends Suzy decided to make a wild berry cheesecake. OMG. The name itself sounds so exotically delicious…! So I’m sharing the recipe she found on the internet, as well as her photos (taken by her)! Enjoy!
WILD BERRY CHEESECAKE (Makes 1 medium-sized cake)
Ingredients
1) 60g butter
2) 250g digestive biscuits
3) 200g whipping cream
4) 350g philadelphia cream cheese
5) 1 cup greek yoghurt
6) ½ cup sugar
7) 3 tablespoon sugar
Steps:
1) Preheat oven to 180 deg. Celcius (or about 360 deg. Fahrenheit)
2) Melt butter over low heat and set aside
3) Blend biscuits till fine
4) Mix biscuit crumbs and butter together
5) Line the bottom on round baking tin with baking paper and pour biscuit crumbs mixture, pressing down with spoon till flat and uniform
6) Bake in oven for 10 min and let cool for another 10 min
7) Mix greek yoghurt and Philadelphia cream cheese in a bowl
8) In another bowl, mix sugar and cream, blending well till yoghurt like consistency is achieved
9) Do the same for the cream cheese-yoghurt mixture
10) Combine both mixtures in the same bowl and mix well
11) Pour mixture above the biscuit crumbs and let it refridgerate for 4 hours or till cheese mixture firms up
12) Add caster sugar to wild berries in a pan and mix over low heat until it achieves a jam-like consistency then remove from stove and leave to cool
13) Add the berries on top after the time in the fridge
Melt butter over low heat and set aside:
Blend biscuits till you achieve a fine texture:
Line the bottom of a round baking tin with baking paper and pour int the biscuit crumb-butter mixture:
Press down with a spoon till flat and uniform:
Mix greek yoghurt and Philadelphia cream cheese in a bowl:
Blend till you get yoghurt like consistency:
Mix sugar and cream in another bowl, and blend again:
Combine both mixtures in the same bowl and mix well:
Pour the combined mixture over the biscuit crumb layer and refridgerate for 4 hours
Firm cheese mixture after being refridgerated:
Add caster sugar to wild berries and mix over low heat until it achives a jam-like consistency, then remove from stove and leave to cool:
