Today Suzy passed me a new recipe, which I modified a little. Instead of using nectarines which she used, I used peaches. I also came up with a fun little name – “Chasing Pavements Fresh Peach Cake” because the cake’s surface remined me of Adele’s “Chasing Pavements” song (and also because it looked like cracked pavements.) Ok, laugh but don’t laugh that hard!
CHASING PAVEMENTS FRESH PEACH CAKE (Makes 1 large cake)
Ingredients:
1) 200g softened butter
2) 1 cup of sugar
3) 3 eggs
4) 150g of yoghurt (I used peach flavoured yoghurt)
5) 1 can of peaches, sliced or 800g of fresh peaches
6) 1/2 cup of chopped walnuts
7) 1 lemon (for juice and the lemon zest)
8) 2 cups of self-raising flour
9) 1 teaspoon of ground cinammon
Steps:
1) Pre-heat oven to 180 deg cel (around 360 deg farenheit)
2) Slice the peaches thinly
3) Squeeze lemon juice and peel lemon zest
4) Chop the walnuts finely
5) Mix butter and sugar in a bowl until sugar dissolves
6) Add in eggs and beat well
7) Combine the rest of the ingredients and mix till loosely combined
8) Grease baking tin and line sides with baking paper
9) Pour cake mixture into baking tin
10) Bake in oven for 50 – 55 minutes or until a knife comes out clean when poked into cake

Slice the fresh peaches:
Fresh walnuts:
Chop the walnuts:
Peel lemon zest:
Squeeze fresh lemon juice:
Melt butter in microwave:
Mix butter and sugar in a bowl till sugar dissolves:
Sift in flour:
Add in the other ingredients and mix well:
To achieve this batter:
Line baking tin with baking paper:
Pour cake batter into baking tin:
Fresh out of the oven:
