Sicilian Eggplant on Oregano Toasts

I am in love with Italy. There are so many reasons why. Juan has Italian roots from his dad’s side; one of my best friends is married to an Italian and is currently living in Italy; and I recently started reading my favourite book “Eat, Pray, Love” for the 5th time (and Elizabeth Gilbert starts her one-year journey across the globe in Italy).

Yesterday, I decided to make an Italian-inspired appetizer. It’s part of a dish that I learnt in Pelusa Moline’s class last Thursday, but it was used as a stuffing for red peppers. I decided against stuffing red peppers last night, and went instead with toasts – a much easier option.

SICILIAN EGGPLANT ON OREGANO TOASTS (Serves 3 – 4)

Ingredients:

1) 1 medium-sized eggplant
2) 15 – 20 small oregano toasts (see recipe for Toasted Bread Sprinkled with Oregano here)
3) 4 anchovies

Steps:

1) Cut the eggplant into small dice-sized cubes
2) Chop the anchovies, making sure to remove any small bones
3) Stir-fry the cubes of eggplant in a wok with some oil (not too much as eggplant absorbs alot of oil)
4) Once the eggplant has turned slightly brown, add in the chopped anchovies
5) Stir-fry a little bit more and once ready, serve warm on oregano toasts

Chopped anchovies with small bones removed:

Stir-fry the eggplant cubes in a wok, and add in the chopped anchovies once eggplant turns brown:
