Summer arrives in less than two weeks!
When I think of summer…
I dream of holidaying by the sea, the sand in my toes, as I lie on a mat, the wind rustling in my hair.
I fantasize about jade green trees, clear blue skies and turquoise waters, with a backdrop of mountain silhouettes.
I think of the most amazingly gorgeous blow-my-breath-away sunsets…
And of course, I imagine eating copious amounts of tropical fruit salad.
Glorious, multi-colored fresh cold fruits, diced and mixed altogether, oozing with their naturally sweet juices.
The best part of making a fruit salad? It’s so incredibly easy – all you need to do is peel, core and dice!
Well, of course peeling, coring and dicing fruits may be a little time-consuming, but how hard can it be?
With the unbearable heat of summer fast approaching, we need a little cooling down, and what better way to do so than with a freshly-prepared tropical fruit salad chilling in your fridge? This colorful, deliciously thirst-quenching snack is also a great dish to bring to a party or a last-minute potluck, and will perk up any table with its colors and taste!

TROPICAL FRUIT SALAD (Serves 10)
1) 2 green apples
2) 2 oranges
3) 3 peaches
4) 2 bananas
5) 4 kiwis
6) 250g of strawberries
7) 2 -3 tablespoons of sugar
1) Peel and core fruits, removing leaves etc
2) Cut/Dice fruits into small pieces
3) Mix all the cut fruit pieces in a large bowl
4) Add in sugar according to taste
5) Chill for at least one hour before serving
