I’m so excited I can barely sit still.
This is the day that I’ve been waiting so anxiously for over the past few weeks. And it’s finally here!!!
I’m smiling like a crazyĀ woman;Ā my heart is exploding with excitement; and I want to share the e-cookbook that I’ve been talking about non-stop with you.Ā I’m so happy I’m blushing even harder than the Mac rouge I’ve got on my cheeks. Be still my heart!
Friends, I want to introduce youĀ to my labor of love – the project that I’ve worked on every single day for the past few months.
Meet the Simple Healthy Breads & Treats e-cookbook.
I remember when I first told Juan that I’d started on the first draft of my cookbook earlier this year.
I wasn’t sure if I’d finally hold true to my word and make it happen. We were dining out in a restaurant as I excitedly told him about it, and because I wanted to make it real, I fumbled in my handbag and found a piece on paper, on which I wrote:
“2015 – Finish writing my e-cookbook.”
Over the next few months, that piece of paper would remind me over and over again – that I’d made a promise (and a written one at that) to fulfil that goal. It was the second year in tow that I’d made writing an e-cookbook a new year resolution, and I decided that this year, I’d finish it no matter what.
And now it’s finally here!
(Read on for all the juicyĀ details!)

WHO IS THIS COOKBOOK FOR?
This e-cookbook is for you.
It was created for all of us. Like most people, we like to enjoy delicious but healthy baked goods that are made from real, wholesome ingredients as opposed to processed foods.
If you love baking and cooking, and want to eat better, and treat your bodies with healthy foods, and like having an e-cookbook on your tablet, smartphone or computer all the time, then this cookbook is definitely for you!
In particular, I wrote this e-cookbook for those who need to go on a low-glycemic index diet because of the danger of being diagnosed with Type-2 diabetes, or those who are trying to reverse their Type-2 diabetes. I also wrote it for Celiacs who canāt eat gluten and want delicious wholesome foods.
I created this e-cookbook specifically for those of you who love baked goods but are struggling with their weight and want to cut down on those extra pounds that donāt make you feel so good.
WHY I WROTE THIS COOKBOOK
A few years after I started cooking, I read Wheat Belly by Dr. William Davis.
His book basically advocated a diet low in carbohydrates and one as free of processed foods as possible. In short, he expressed heavy support for a grain-free diet, which naturally meant a low-glycemic index diet (one which consists of foods that do not greatly raise your blood sugar after being digested).
Intrigued by the claims in Wheat Belly, I began searching for grain-free recipes to try, and as I started moving away from a diet high in carbohydrates and sugars to one that was mostly grain-free, as well as avoiding processed foods as much as possible, I found that I was also gradually feeling better.
My immune system had improved and I was no longer falling sick as easily. Iād also managed to lose extra pounds that had been sticking around for the past few years.
MAINLY, FOR MY MUM
If you’ve been following this blog, you might already know that I wrote thise-cookbook with my mum as my main inspiration.
When my mumĀ suffered a heart attack last Christmas and the doctors also diagnosed her with Type-2 diabetes (also known as “adult diabetes”), I was shocked into action. I decided to post more grain-free recipes on the blog – recipes which my mum could cook without fear or causing dangerous spikes in her blood sugar level.
After changing her diet, my beautiful mum lost 14 pounds, dropped two dress sizes, as well as showed great improvement in her hemoglobin A1c test (a test which measures a 90-day average of a personās blood sugar levels).
FEEDBACK FROM READERS
At first, I thought that the grain-free recipes I posted only benefited my mum.
That was until blog readers whom I didnāt personally know started commenting on the blog and emailing me to tell me that adopting some of the grain-free recipes from the blog had helped them lose weight as well as keep their hemoglobin A1c levels down. I was amazed.
A follower of the blog also recently commented that sheād gone from being pre-diabetic to out of danger of being diabetic simply by following a grain-free diet.
I cannot deny that we are what we eat, and it is of utmost importance that we be selective about the food we put into our bodies. The effect of food in our lives is crystal-clear to me.
MAKING A DIFFERENCE
I finally felt that I was creating a positive impact, dish by dish. I saw how the grain-free recipes on the blog helped people regain their health.
I realized that I wanted to and could make a difference by compiling some of the best grain-free recipes on the blog into a digital cookbook ā one that people could easily refer to, carry with them in their tablets and smartphones, or open on their computers. I wanted these grain-free recipes to be used and shared by those who made them ā not just stay on the blog ā and help people enjoy good health.
In this e-cookbook, Iāve focused on grain-free breads and treats because baked goods are often the hardest to achieve when using grain-free flours and ingredients.
These are the recipes that have found their way from the kitchen to my table; recipes that have been shared with my friends and loved ones. Recipes that are meant to be used over and over again ā to be tweaked and modified to your preferences and tastes. Recipes that I know you will enjoy as much as I do.
