Today the sun is out again, although a significant drop in temperature has nudged its way in after the heavy showers on the first day of fall.
Along with the change in seasons, which means auburn trees, pumpkin-flavored everything and much cooler weather, the switch from summer to fall also means this – a change in the way we dress.
That’s something I’ve always found fascinating about living in a seasonal country: the fact that the entire calendar year is so significantly split into four different blocks by both the weather as well as fashion.

Where I sit in the corner of the Starbucks along the busy M street, I have a red brick wall in front of me, and a large window to my left, giving me an unobstructed view of the pedestrians and unending traffic passing through the historic and quaint neighborhood of Georgetown.
Most people are clad in light jackets or blazers and long pants; quite unlike a few days ago when shorts and skirts and flip flops still ruled the streets. Some have even broken out woollen sweaters, scarves and ankle-high boots.
I really enjoy people watching, I realize.
I like observing them secretly unnoticed from my corner of the cafe – where the perpetual smell of coffee being brewed mingles with the sound of indistinct chatter from the customers – and where I can tilt my head ever so slightly to the left and watch men and women on the other side of the road stroll past the Irish Pub and its Whisky Room before heading next door into Urban Outfitters for shopping.
I’ve taken to heading to some random cafe in the later part of my weekdays (that period of time which overlaps between late afternoon and early evening), after writing a bit in the morning and having lunch at home.
Some days, I go with a notebook in hand, to jot down random thoughts and my Kindle by my side for pleasure reading. Other days, I bring my MacBook with me to strings some ideas together and draft posts over a cup of steeping hot green tea or any other drink I feel like trying (today it’s the cinnamon chai latte).
It’s such a wonderful feeling to be able to wake up and work from wherever I wish; at my workspace just next to the kitchen at home or in a cafe of my choosing. I feel so incredibly fortunate that I can write wherever and whenever I want to; and I get to decide how much I want to work or not (but trust me, I’m usually working on the blog and writing something from the time I wake up till the time I my head hits the pillow). So this is what it feels like to do what you love.
Life is crazy isn’t it? But so crazy good.
To keep us warm during the cooler fall days, I’ve cooked us large bowls of healthy vegetable zucchini noodle soup.
This quick and amazingly healthy meal is made with clear vegetable stock and bright, colourful vegetables accompanied with long thin strips of zucchini noodles (made with the best julienne peeler ever), my favorite food this year.

Description
This quick and healthy meal is made with a light vegetable stock and bright, colourful vegetables, accompanied with long thin strips of zucchini noodles.
Ingredients
- 6 zucchini, shredded into noodles with a julienne peeler
- 1/4 cup of diced carrots
- 1/4 cup of diced red bell pepper
- 1/4 cup of diced green bell pepper
- 1/4 cup of fresh corn kernels
- 1/4 cup of fresh spring onions, chopped
- 4 cups of vegetable stock
- 1 cup of water
Instructions
- Combine vegetable stock and water in a large pot and bring to a boil
- When stock-water mixture is boiling, add in carrots, bell peppers and corn kernels, then bring heat down to medium, and let cook for 10 to 15 minutes until vegetables are soft
- In the the mean time, divide zucchini noodles equally into two bowls
- Pour vegetables and soup over the zucchini noodles and garnish with fresh chopped spring onions

Mummy, next time you feel like eating noodle soup, ask Miriam to swap out the rice noodles for zucchini noodles (much lower in carbohydrates!! and won’t raise blood sugar as high!)

Daddy! I promise you you’ll love this noodle soup – it’s super healthy and doesn’t even use typical rice/wheat noodles so less carbs!!
